Halfway through my first full mash/full boil! (In my apartment!)

I'm having a good day. I used the 'easy partial mash' guide, changed my recipes for a 2-gallon IPA recipe (chinook + cascade + cascade whole hop dry hop), and mashed on my stovetop for 60 minutes at 153. I sparged in another pot at 175f for 10 minutes, and this is a picture from the boil. Ill...

    Recovering from overly vigorous ferm?

My first PM oatmeal stout (Kenya Gold) turned out to be a pretty big beer (1.075) at 3 gallons. I nailed my temps on this one and used a yeast starter. I have never seen fermentation this vigorous! How do I recover from this? I know this isn't bad at all...its good, in fact, but do I remove the...

    Accounting for boil-off.

Big brew day tomorrow, and the instructions call for steeping the grains in 2.5 gallons of water for 20 minutes, and then boiling with bittering and flavoring hops for ~1 hour. I suspect I will have less than 2 gallons left after an hour of boiling. Do I keep adding water to the boil or is the...
