    7 weeks and counting

I bottled my first lager on 6/5 and it has yet to completely carb up and is still extremely green. It was a normal 3-4 weeks in primary, diacetyl rest, lagered at 33F for 30 days, and came out clear on bottling day. I did not add extra yeast as I thought a month wasn't long enough for all the...

    Cold Crash BEFORE Dry Hop

I brewed a Rye Pale Ale on 6/22 and cold crashed it for 3 days this week in anticipation to bottle, but I forgot to dry hop. So I warmed it up to 68 and dry hopped for 24+ hrs with 1 oz of Summit pellets(out of cascade). I cold crashed w/o an airlock and just used a bung to avoid any water...

    Aging kegged beer

I have finally decided to piece together enough stuff to keg. I don't like my beer green at all, so I usually TRY (keyword is try lol) to let my beers sit in the bottle for at least a month or so before I drink them. That is a month on top of a month in primary, so 2 months. Anyhow, I am...

    Worst Brew Day Ever

Decided to brew a basic Brown Ale yesterday just to get another beer in my pipeline. It was nothing special and I expected everything to be pretty plain. Boy, I was wrong..... First I noticed that the screws on my clamps for my strainer were rusted. I decided to let it roll, but when I...

    No Carb- 3 weeks

I bottle everything and this is the first time I have had any carbonation problems in the 18 batches I have made since starting this hobby. Anyhow, I brewed an English IPA on 4/30 with an OG of 1.060 and bottled on 5/27 at an FG of 1.016 for a 5.9% ABV beer. The hydrometer sample tasted...

    Pre-Boil Gravity Calculation

I posted this issue on the beginner's forum as well, but I thought I could get a more knowledgeable response here. Ok, I brewed a Founder's BS Clone with no real issues as my pre-boil gravity came out at 65 points. My OG, at about 85 F, reads 73 points. I have been using the formula of V1*C1...

    OG issue

I just brewed a 5 gal batch AG of a Founder's Breakfast Stout Clone and had no problems with a 1.065 pre-boil gravity, which according to my calculations should give me a wort of 1.083 (which is still low efficiency, but I was happy with it). Well, I just sampled it and it is reading 1.073...

    Yeast addition when bottling lager

I have a lager that has been lagering @ 33F in the secondary for 30 days. It sat in primary for 3 weeks @ 55F. My question is should I add a little yeast when bottling? I have read that 30 days is not really long enough to worry about lack of yeast, but I am looking for input from you guys first.

    Efficiency Issues Solved???

I have had efficiency issues with all but two batches of AG (now 9 deep in AG), so I troubleshot the crush, my thermometer, volumes, mash temps, etc..... My main issues came up when I brewed anything non-dark (2-Hearted Close, APA, ESB, etc...) I had no problems with a brown or a milk stout...

Phew, that was close... (water additives)

This was my first time brewing with any water additives today. I went to the store and got 8 gallons of RO and had my basic "soft" water profile ready to go, but I goofed up and bought Calcium Carbonate instead of Calcium Chloride. I added the amount I needed and noticed the water was chalky...

    Stuck Sparge Fix?

I have a 10 gal cooler conversion exactly like this one: https://www.homebrewtalk.com/f51/cheap-easy-10-gallon-rubbermaid-mlt-conversion-23008/ Anyhow, I had a stuck sparge the other day because the little brass plug used to close off the end of the tube came out due to the high temperature...

    Lager Fermentation

I brewed Revvy's Vienna Lager on 4/10 and today is the 20th and my beer is still fermenting. It has been @ 55F the entire 10 days. There is still a half inch or so of krausen with a healthy bubbling every minute or so. This is my first lager and I know it can go up to 10 days or so, but I...

    Lagering!!!!!

I just brewed Revvy's Vienna Amber and everything came out great. As this is my first lager though, I have some questions. I have read that it is fine to pitch warm 70-75, let fermentation begin @ 65ish and then lower to 55 or so. That is my plan anyhow. I have a cooler and Johnson control...

    Low OG advice

I just finished my 2nd AG batch. I know what happened with my first batch as I had way too much strike water and overshot my pre boil volume by a gallon or so and screwed up my gravity pretty badly. Today I had just the right amount of strike, my mash temp was spot on within 3 degrees for an...

    All-Grain Mash/Lauter Questions....

I brewed my first all-grain the other day and it didn't come out like I wanted to. I know what I did wrong, for the most part, and I just had a couple questions. I attempted to make a 5.5 gal batch of an APA with 12.5lbs grain @ 152. The hops aren't important for now. Anyhow, I punched...

    Candy Sugar

Brewed my 7th batch yesterday (a Belgium Ale kit my wife bought me for christmas) and I forgot to add the candy sugar during the boil. I usually don't follow directions on these kits as they are getting boring and I am ready to move on to all-grain, so I was a little lackadaisical in brewing...

    First batch poured

Was supposed to be a brown ale, but as it was my first batch it turned out much darker. Looks like a stout, tastes like Newcastle. Very happy with it. I was worried that it didn't carbonate well after only 10 days, but (while it needs a little more) it is drinkable and I am about to have my...

    Recipe Opinions

So after brewing 2 batches and one waiting until Monday, I decided to piece together my own recipe. My last batch (Irish Stout) and the one I am brewing on Monday (Red Hook Clone) are both partial mash kits from Midwest, so I decided my first researched recipe should be partial as well. This...

    Bottled my first batch today!!!

English Brown Ale in primary for 16 days @ 70F It turned out to be about 3 gallons worth and I got 28 beers out of it. My FG was high around 1.016, but it was that yesterday and last week; so I decided to go ahead and bottle. I have them all in a Sterlite bin with the top on it, so if I get...

    Sinamar

Ok, my Irish Stout grains (this is a partial mash) were steeped at lower than 155 due to a faulty thermometer. The end result is a wort that looks more like a Dark Brown Ale than an Irish Stout. Some say here that wort will darken some over time after the yeast drops, but I need a much darker...
