    First Kolsch

Update - I kegged the beer a month ago, after being in the primary for almost 6 months! I hooked it up to the gas, but didn't try it until last night because I wanted to clean the lines first. It was very good! A bit darker, more of a copper color, but very tasty with absolutely no off flavors...

    First Kolsch

I smelled it last week and it seemed ok...nothing rancid or resembling chili fest toilets :). I'll keg it this week and hope for the best. Thanks!

    First Kolsch

OK guys, need some help here. I got ridiculously busy and sort of lost track of all homebrewing for the past couple of months. So, this damn Kolsch has been sitting in my basement for 10 weeks or so, in the primary. :( I don't need a lecture on being lazy or stupid, SWMBO gives me plenty...

    First Kolsch

It is Wyeast 2565 Kolsch Ale yeast. Temp range is 56-70 on the website. Do you think basement floor is a good idea?

    First Kolsch

I'm brewing my first kolsch tonight - an extract kit from Midwest. I built a starter last night, so it will have been prepared 24 hours prior to pitching. This is my normal procedure and is resulting in very short lag times and active fermentations. Questions - do I need to ferment at cooler...

    Kegging and bottling a batch

Good point regarding holding the wand. That won't be easy. Just to make sure I understand, can I do either of the following options? 1) Mix up a priming batch for 5 gallons, put in bottling bucket. Rack beer to bottling bucket. Connect tubing with bottling attachment to spigot and fill...

    Kegging and bottling a batch

I keg all of my beer, but I want to also bottle a 6 or 12 pack for gifts, travel, etc. I don't want to go from keg to bottle, but rather bottle condition the 6 or 12. I'm looking for the easiest way to accomplish this, and here's my plan: Attach bottle filler (with the auto shutoff thing)...

    Brewing a Hefeweizen

Ok, so that wasn't my last question :) This won't get drank quickly, so I will bottle. I have never bottled, just decided to keg when I started. I understand the bottling process, but do I need to do anything different to obtain the high carbonation levels a hefe should be served at? I plan...

    Brewing a Hefeweizen

Ok, thanks. I just replaced the airlock with a new, sanitized one. The kreusen is still high, but not in the narrow part of the fermenter, so perhaps it has subsided and will continue to lower. It has been over 48 hours since active fermentation began. Last question - I normally keg my beer...

    Brewing a Hefeweizen

Update - I made a starter on Friday night with 20 oz water and 1/4 cup dme and 1/4 tsp nutrient. Added yeast from swollen propagator. Brewed batch up on Sunday and pitched yeast. Put primary in basement on table where ambient temp is 63-64. Active fermentation began overnight and the temp on...

    Brewing a Hefeweizen

Thanks Brad - I'll put a 1 gal glass container on my shopping list. I want to brew the hefeweizen this weekend, so I'll skip the step-up this time. Probably try it when I do a higher gravity beer.

    Brewing a Hefeweizen

I see. I checked Palmer's book and he talks about using a 1/2 gallon juice container or something similar. Let's say I started by making a 20 oz starter and wanted to step it up. Could I transfer the wort to the sanitized juice bottle and then just boil up another 20 oz of water and 1/2 c...

    Brewing a Hefeweizen

Could you please explain the stepping up process? Or just point me to a link somewhere. Thanks

    Brewing a Hefeweizen

Thanks - I think the SG is supposed to be 1.048, so nothing big. I'm making this for my wife, so I'll opt for the fruity bananna side since she'd prefer that. Upstairs it is. I'm just going off the Wyeast web site that states the Propagator needs to be in a starter. Another question -...

    Brewing a Hefeweizen

I'm supposed to receive a kit of Hank's Hefeweizen from Midwest today. I have a couple of questions: 1) This is the first time I'm using a Wyeast Propogator. I have used the Activator in the past and made a starter as follows: 20 oz water, 1/2 c dme, pinch of yeast nutrient - made 24 hours...

    Nursery Water

I'm way up north, Round Lake. I brewed last on 3/2. It wasn't so bad when we got started around 5 pm, but it sure was cold when we finished up. I just don't like brewing during the day, because I enjoy a few beers while brewing. And the SWMBO doens't care for me drinking during the day, at least...

    Nursery Water

Hi, I just brewed a batch of ESB a couple weeks back. When I transferred to the primary, I was a bit short of 5 gallons, so I added about 3/4 gallon of the only bottled water we had on hand, which happened to be nursery water used to reconstitute baby formula. Other than stealing my babies'...

    Hooking up a commercial keg

I have all of the equipment needed to keg my beer, just no beer yet. I'll be kegging a batch of apfelwein in a couple weeks, and should have my first 2 homebrews ready for kegging by the New Year. So, in the meantime I want to have something to put in my nice shiny kegerator. Other than a...

First brew - couple of big mistakes (long)

Thanks, that is great info. So it sounds like the batch might have a chance. I'll post some updates as time goes on.
