    Critique/Advice please - First saison hybrid

    Have just fined. ABV as it stands is 12.6 (Overshot target by about 1.6). Aroma is awesome and quick nip was very hoppy with lemons and herbs. Will update when it has been bottled for a week or so.

    Thanks WhamFish I have reigged the recipe. Removed the Crystal malt altogether, dropped the marris otter down to a token amount and put some Vienna in it's place. I've also popped in a small 60 minute Chinook addition. Will let you know how it turns out, Paul

    How to brew with Chocolate

    I have recently done just that. I bought some organic cacao nibs from Amazon (crushed raw cocoa beans). I added these in the last five minutes of the boil. Came out great!

    Adding juice to secondary

    I recently made a batch of amber ale, and added a litre of lychee juice to the secondary. It went nuts, and I do mean nuts. Luckily I fitted a blow off, otherwise the secondary ferment would have went everywhere. Tasted quite sour and dry. Might try it in a wheat beer next time.

    Wheat beer and apple cider

    My only advice would be to use a yeast strain that has a high alcohol tolerance, as it is going straight in to established strength. I guess it would be quite dry, and I would also assume the end result would be very tart. Be interesting to hear how this turns out.

    Which hops would compliment coconut

    I am soon to brew a coconut porter for a freind would loves both porter and coconut, for his house party later in the summer. Can anyone suggest a hop that would compliment the flavour of coconut? I'm racking my brains on this one, but cannot make a decision. Thanks in advance:confused:

    Baking yeast

    You would get some fermentation, but you would get some pretty awful beer. I tried this once on a basic smash, just to see how it would work. Extremely strong sulfur smells and utterly undrinkable beer, that also refused to clear. Not a good idea in my opinion.
