Things are getting Funky and I hate it!!

I'm thinking of baking it for an hour or so then flushing with Star San.. I do have pumps, 2 of them. I normally circulate wort through them (chiller and hoses) for the last 15 minutes as well. I am leaning towards selling my plate chiller and going back to an immersion chiller. I'd like to have...

Things are getting Funky and I hate it!!

I have been fermenting in Glass Carboys, I have several of them. My first hunch is my plate chiller. I flush and back flush over and over til it runs clear. BUT, the last time I went to use it, it was foaming out of both the beer in AND the beer out. There was for sure some nasties in there. I...

Things are getting Funky and I hate it!!

I've been brewing for about ten years now and have not had many problems with sanitation or contaminated batches... Until now. I recently have had a few batches go bad on me. Dumping 10 gallon batches down the drain is the worst! This first happened to me with a couple of Lagers this spring...

    Wye viking hops

These seemed to ripen EARLY this year. They are looking good, but all the other plants are only burrs!

    Dying Side Arms

My good buddy has a huge garden with about 18 crowns going. The pic I'm posting isn't great, but you can see the side arms growing about 2 - 3 inches, then drying and shriveling up. My hops at home haven't done anything like this, and the rest of his plants are growing STRONG. What's going on?

    Wye viking hops

OK digging this baby up... my hops sat in the fridge to long (didn't freeze) and got moldy and gross. Must not have dried them enough, AND bumped my brewday back a couple weeks.. FAIL! this year I should have 6 - 8 Lbs. of Viking hops. In this photo you can see them, the ones on the left side...

    Great Lakes Hops

B-Hoppy - I'm told that even though the hermaphrodites have male flowers, they will not reproduce. Those are 4 year plants and I have not found a single seedling.

    Great Lakes Hops

The male parts are from my Columbus Hops. Its not stressed, its been a hermaphrodite since day one. Research shows its a fairly common trait of Columbus. No problem whatsoever.

    Great Lakes Hops

My buddy's hops from post #31 two years later. These things are MONSTERS - Viking on the left, Centennial across the middle, Willamette on the right.

    BEST false bottom...

I do mill my own grains, I am fairly certain this is not the issue.

    BEST false bottom...

I have been brewing with a "Pico Style" False bottom... I have been relatively happy with it. I like the fact that it supports the false bottom above the bulkhead/dip tube assembly. My efficiency can be inconsistent at times, I am wondering what other false bottoms people SWEAR by. I do like...

    Autumn Seasonal Beer Punkin' Ale

I brewed it on 9/23 - 1.064 racked on 9/28 - 1.012 I know if I mashed higher I would see it stopping around 1.014 - 1.016 on its own. My mash was at about 152 on average. I am only trying to avoid this brew drying out. I got a lot of hot alcohol from this one last time when I let it sit in...
