    The cam locks come with a large silicone washer that requires a little more force to operate. A simple replacement with a silicone o-ring will allow for easy, one hand operation.

    brewing over a wood fire.

    I've brewed a DME Nut Brown on the firepit in the backyard. Controlled temperatures by moving the pot on the grill grate toward/away from the flame much like cooking on the grill with indirect heat. You can expect some smoky flavor in the beer, but it worked great with the Nut Brown recipe.
