    I apologize for resurrecting this thread, but what are the temperatures that people are fermenting their worts at? I have a keg and spundeling valve, but I'm trying to work out how much temperature control I need to exert. Lagers at 68? Ales free rising? Thanks.

    Milling grain a month in advance

    It’s best if you can crush closer to the date, but if this is what circumstances permit - that is what you have to do. I’d suggest you store your crushed grains in a sealed 5 gallon bucket (using those spin lids). It will keep a long time and taste better than extract.

    How big of a step up on a yeast starter is too big?

    I regularly pitch older yeast (6+ months) into 4L starters. My only variable is time, some yeasts finish up in three days others take a week on the stir plate. Cold crash and decant.

    German Pils Gavin's Glorious German Pilsner

    The yeast calculators are over stated. I've used a single vial of 1+ year old yeast in a yeast starter with a store plate and had fully attenuated beers (fully fermented). I think 5-pacers must be good for 20+ gallons of beer.
