    Remove pith bitterness!?

Time will do the trick. Its the answer no one wants to hear, or as Hootie would say: Time is wastin', time is walking. You ain't no friend of mine. I don't know where i'm going. I think i'm out of my mind, thinkin' about time.

Coffee Mead - Primary or secondary?

Also thought I'd share a link to cool unit for cold brewing coffee. I was a supporter of their during theirs Kickstarter campaign. http://www.bruer.co/ Expecting delivery any day now. Looking forward to using it for an Oaked Buttered Rum Coffee mead recipe I've been wanting to give a try!

Coffee Mead - Primary or secondary?

I have found that it is hard to please most with coffee meads, but to each their own. Tasting B Nektar's Chazzano Coffee mead for the first time, I will admit I was not a fan, but that was because I had it well chilled from being in the fridge for a few hours. I tried it again at room...

    Buttery mead???

Keep it simple and just use Lalvin CY3079. Imparts a nice chardonnay like buttery taste and aroma. Gives the mead a velvety mouthfeel as well. Slow to start, and slow to clear, but very cool yeast strain. 15 lbs honey for a standard 5-gallon batch 4g grape tannin (optional) 10g of CY3079...

    Orange marmalade mead

I've made an orange marmalade mead with orange blossom honey that is to die for. Basically just dilluted the marmalade into the water before adding the honey. 71B as the yeast with a 1.040 FG Was brilliantly clear in under two months as well.

    Yeast for a cyser

I would recommend D47 for cysers. It helps bring out much more apple character. 71B is always a good choice as well.

    New meadery opening

Hey guys, just wanted throw out a link to our meadery's Kickstarter campaign. Hate to beg or spam so this will be my ONE post about it. We have only 9 days left and need some help reaching our goal by next week. Any pledge however big or small would be greatly appreciated. A simple spreading...

First mead fermenting so slooooooow (10 days drop .15 using Wyeast Sweet Mead)

I would recommend to try using a nutrient mix addition of Go-Ferm and Fermaid-O the try and wake up the yeast a bit. Even though DAP is commonly used for yeast's source of nitrogen necessary in mead making, it can actually be harmful to yeast, as well as sometimes creating some sulfur like...

    New meadery opening

Hahaa, thanks man. It's go big or go home in my opinion. Between my business experience being successfully self-employed for 4+ years, and the stellar recipes I will be debuting with, I hope to let the mead speak for itself and then do what I do best.

    New meadery opening
