    Rotten Eggs

I am brewing a Winter Warmer Strong Ale. I pitched the yeast a bit cold, so after 12 hours at 62, I raised the temp to 68 and in no time the krausen started to form and the air lock was bubbling away. It's Day 2 and I'm noticing a slight sulfur scent coming from the airlock. Infection or is it...

    When to remove whole spices

I'm brewing a pumpkin ale using cinnamon sticks, whole nutmeg and allspice. It's being added to the boil 45 min in. Do I remove it when the boil is finished or does it stay in the fermenter?

    Substitute canned pumpkin for fresh?

Have a pumpkin ale recipe that calls for 5 lbs of fresh pumpkin. It's still August and I can't find a pumpkin. Can I use canned?

Do I Dump my Beer? Waaa!

So on advice I read online, I bottled my beer using cane sugar for priming for the first time. I boiled 2/3 cup in 2 cups of water and added it to the bottling bucket. I read that it will carbonate fine but take 3 weeks. So it's been 3 weeks. I opened a chilled bottle, there was the slightest...

Did I Eff up my Batch?

My house always gets cold and I keep a heating pad under the bucket and put it on low when I see the temp dropping below 65 just to raise it bit. I knew one day I would do what I did today and forget to turn it off. So I get home and my temp is around 78. Did I completely lose my batch? Its back...

    How Does Honey Effect Fermentation?

I'm brewing a mini mash kit I purchased. It's a New Zealand Honey IPA. A pound of honey was added after the boil before chilling the wort. Of course I don't have my notes in front of me so I'm not sure of the exact yeast, but it was a White Labs liquid ale yeast. Anyway, there was nothing...

    Help! Multiple Hop Additions

I'm following instructions that say to add the bittering hops in a muslim bag to the boil, after 30 min, add flavoring hops. But do I remove the bag with the bittering hops or leave it in for the entire boil?

    Porter Question

K, so I brewed a mini mash coffee porter. Been in the primary for almost 3 weeks. It's reached FG but my sample is a dark brown, not much darker than the IPA I brewed. My question is, shouldn't it be more black like a stout? I drank a porter last night at the bar and it was black. You could...

OK to Rack to a Secondary?

I would like to free up my bucket and rack the coffee porter I have to a secondary. It's been in the primary now for 10 days. Is it ok to rack now and leave it in the secondary (glass carboy) for another 2 weeks or so?

    Good Hard Cider Recipe?

Anyone ever make hard cider and have a tasty recipe to share? I have a friends Bday coming up and that's her beverage of choice.

    Porter Fermentation

I have a coffee porter that's been in the primary for 8 days. Is 2 weeks long enough before bottling or should I let it go longer? 3 weeks?

    Grommets and the Noobs

Ok, I'm reading all over this site about noobs pushing the grommet on their bucket lid into the brew. I did the exact same thing first time. Not sure why this is so easy to do, but why don't they give you some sort of warning? I thought I was the only idiot to do this and felt like a fool until...

    Clarifiers Really Necessary?

I'm new to brewing and am curious about using clarifiers. From what I'm reading, it removes cloudiness/haze but doesn't seem to affect the quality of the beer. Is it true that it is used solely for aesthetics and isn't something you need to use?

    Chilling the Wort

I'm new to this and took a class recently. I was told to put my gallons of spring water in the freezer to "cheat" a little in cooling the wort to ferm temp once it was added to the primary. I cooled the wort in an ice bath in the sink to bring the temp down to under 160 in about 5 minutes to...
