    Adding Whisky Soaked Oak chips

I use spirals and cubes, here is my process: Boil a little bit of water, throw the cubes or the spiral into it for <5 min. Soak in bourbon in a glass mason jar for ~ 7-10 days Day 1: Room temp Day 2: Refrigerator Day 3: Room Temp Day 4: Refrigerator (get the pattern here?) The thought is that...

Have fresh Cascade hops, but don't like IPA

A hoppy blonde or a hoppy wheat? Only add a small 60 min addition, or do a FWH addition with no 60 min addition, then maybe add a flame out addition or dry hop - keep your IBU's low and just have fun with it.

    coriander and vodka

I personally have only used it at flameout or <5 min left in the boil Let us know how it turns out, soak it, if it smells awful, don't pitch it. P.S. I wouldn't take a shot of the vodka afterwards ;)

    Opening and Resealing During Priming?

Yeah, I wouldn't bother the bottles as they sleep either. If you really want to taste the brew as it ages, keg it up! Beer changes character so much as it carbonates, as it settles into it's new home, and as it ages. Varieties that will age better than others are those that are a little...

    New Brewer's Stupid Question

The "smack pack" is essentially making a small starter -- the yeast is in there, it just needs time to get going. As previously stated, just gently swirl your carboy or bucket some, and let it be. Make sure your fermentation temperature is within comfortable range for the yeast too. In the...

    Fruit Beer Succulent Strawberry Blonde

hiya all, I will be bottling this on Tuesday - it has been cold crashing for a week with a little gelatin, its looking beautiful! What is the typical dosage of corn sugar for this recipe? iBrewmaster is telling me the CO2 Range based on the recipe style is 2.40 - 2.80. I have chosen a...

    Chocolate Amaretto Stout

So the girlfriend loves her some Stout - she also loves chocolate and amaretto. When we went to our LHBS we found an amaretto extract I figure we will add to secondary or to the bottling bucket. This will be her first batch solo. Has anyone here used an amaretto extract and what do you all...

    Will this size frig work?

I doubt a dorm fridge will fit a 5 gal bucket. Do yourself right throw a cheap Craigslist fridge in your garage or a buddy's garage, slap on a Johnson controls a419 temp controller and ferment/cold crash away! Cheapest I've found: http://www.amazon.com/dp/B00368D6JA/?tag=skimlinks_replacement-20

    Just finished first bottling

Congrats and welcome to home brewing! It's important to "sneak" tastes from your batches. It's the only way you will ever figure this hobby out.

Spice, Herb, or Vegetable Beer Bourbon Vanilla Porter (AG)

I doubt you will get any lower. I only used 1 Wyeast smack pack to get my above mentioned numbers. Your brewhouse efficiency must have been lower or your measurements were off slightly. I wouldn't worry about it, the extra bourbon will bring the ABV up some for ya.

Spice, Herb, or Vegetable Beer Bourbon Vanilla Porter (AG)

What kind of bourbon did everyone choose? I am using Jim Beam. I am sitting at 11.5 brix (1.046 SG) after 15 days in primary. I started at 20 Brix (1.083 SG). That puts me around 8% ABV. I assume after soaking the chips in Beam for a week, and then adding a few mL to the 5 gal batch before...

Spice, Herb, or Vegetable Beer Bourbon Vanilla Porter (AG)

I brewed the recipe I posted above on Sunday 30 Sept 2012 and I got a OG of 1.083. I had to add some water to bring my total volume up to 5 gal... I think after boil I had like 4 gallons. Anyways, this brew tasted amazing, so I can't wait to see what comes of it. I didn't do a starter, just...

Spice, Herb, or Vegetable Beer Bourbon Vanilla Porter (AG)

Okay guys, I have been searching this thread for awhile now. I want to make a partial mash of this recipe, I have found a couple recipes, but i have also read tales of poor head retention. Can someone throw me a bone here and write up what they have made successfully? It would be nice...
