    One gallon batch

    I am about to brew my first all Grain batch. It is a one gallon recipe. I see one gallon carboys for sale. Does the one gallon carboy allow enough headspace for primary fermentation?

    Extract versus all grain?

    Assuming you use quality ingredients and brewing techniques are carried out correctly, is there difference in taste, quality, appearance between extract and all grain batches. In other words, in a blind taste test could you identify which was which?

    Will fermentation restart?

    Brewed an ESB began bubbling in blow off tube/ sanitized water in less than twelve hours. Sometime between 24-36 hours all signs stopped. Temp got to 64deg. Which is the low end for the safale- S04 that I'm using. I moved it to a warmer spot in the house it is up to 70deg with no signs...

    60+ hours before signs of fermentation

    I pitched yeast in my APA extract batch, it was more than 60 hours before I saw the first bubbling in the airlock. I assume the beer should not be negatively affected by this? Have you ever seen this before?

    Can you wait too long?

    I have a batch of witbier that has been in secondary for about six months. I just opened the bucket, it smells good, but has more floaters on top than I am used to seeing. This could be a by product of the orange peel and coriander seeds, or a sign of a problem. Can it ferment to long?

    Just brewed Wirbier

    This was a Brewers Best kit. My fourth batch to brew. A few more steps to this kit. Also it was my first use of my homemade wort chiller. Went pretty well.

    labeling my brew...

    made up some quick labels on the computer for a couple of my brews. I'm only labeling the the ones that are going to be gifts, for those that have listened to my brewing adventures.

    vanilla beans in RIS?

    I am fermenting a russian imperial stout now and am considering tossing some vanilla beans into the secondary. not sure how many of them to use. and for how long to have them in there. due to high abv(8.5-8.75) was considering bulk aging in the carboy. anyone have any thoughts?

    just drank my first homebrew

    After my taste test last week I was little nervous. This week went much better. They are starting to carb a little and the taste is a world better than a week ago. It has been bottled for three weeks, will try another one next week.

    against the grain

    just had my first growler. Black IPA from a louisville, ky brewery. this was a good beer. enjoyed it while packaging my first batch of beer, a red ale.
