I need more aroma!!
Can I just dry hop (pellets) straight away as soon as wort is transferred to the primary, or should I let the yeast do its thing and dry hop after beer has been transferred to the carboy?
I've had my Kolsch in the bottles 3 weeks now - cracked one open last night. Good color and carbonation.
But the taste is very fruity. I've never had a Kolsch before. Is this style supposed to be a little fruity tasting?
Will dry hopping give me more hop aroma or just more bittnerness?
I brewed an extract IPA - great hop bitterness, but not much hop flavor/aroma. Will dry hopping improve this?
it's been 5 days in the bottle, tested one @ 5days (i know..2 early). most other brews i've done have at least been somewhat carbonated by day 5, but this kolsch is totally flat - what gives??

I brewed an extract kit IPA. After 2 weeks in the bottle, it's totally unremarkable.
I know....I should wait longer.
My question is, if this stuff tastes "watery" is it simply a question of aging?
I am brewing a Kolsch Kit from Beer-Wine.com. Seemed that the wort, when I pitched the yeast, was darker than I expected. I waited until the end of the boil to add the DME and rice solids. How can I get a lighter color next time?
Just picked up a Hefe extract kit. I've heard you don't have to rack into a secondary - just leave it in a primary for 7-10 days and then bottle.
Two questions:
1. Is this ok?
2. Won't leaving the beer on the yeast cake for that long create off flavors?

I am about to brew and weisse extract kit that includes steeping grains and hop pellets.
My secondary is going to be in use for the next 2 weeks with a nice IPA. Can I just ferment in the primary bucket and bottle once FG is reached?
I used a DME this weekend to brew an IPA. I added 7lbs of light DME and when I added to the boil, it seemed to clump up.
It eventually dissolved, but I was just wondering if clumping was normal
So, for the past week I have been enjoying my first batch of amber ale. I'm so proud of it, that I gave a bottle to my boss and my brother-in-law.
Here are comments I heard before they knew it was homebrew.

Big fan of American style IPAs...
I got a kit that includes 3 "sets" of hops to be added into the wort during different parts of the boil. The last step tells me to add 3 Cascade Hop Plugs for 0 minutes.
I want to make this extract kit taste like an actual IPA - I'm thinking New...
Anybody ever tried to put jalapeno slices in a light ale when bottling? Just curious. I tried a jalapeno beer once, and it was pretty good. Normally, I don't believe in abusing ale like this - just curious.

I have packets of C-Brite that state "no rinse". How can this be true? I would think you'd want to rinse anyway?
