Hi all!
I am working on a maple syrup flavored cider. So far it has gone okay, but I a have run into flavoring issues.
I have a basic cider that I made. To get my sugar content up high enough I used a mix of dextrose and maple syrup. I tasted it when I transferred it to the secondary a few minutes ago, and all the maple flavor had burnt out (I half expected that).
Should I add more maple syrup to the secondary or wait until I keg it up and use that to prime it?
Or should I just skip the syrup and go buy some of that maple flavoring?
And finally how much do you think I should use to give it a nice flavour with out making it taste like an apple pancake?
