I am planning to brew my third batch this weekend.
I was trying to decide between a wheat or a bitter.
Don't want anything incredibly complicated, but not a pure extract brew either.
I live in an apartment and have a 3 gallon pot, so full boil is a no go.

Any suggestions?
 
If you want something simple, go for a wheat. The nice thing about wheat is that they don't have many ingredients, and you can drink them less than a month from brew day.
 
Go with a hefewezein, I did this one and it turned out pretty good and was really easy to do, as well as easy on the pocketbook.

5gal batch
6lbs wheat dme or lme
steep 1lb crushed wheat
1oz hallertau @60
wyeast 3068

Ferment around 68-70

Super simple, from brew to bottle was about 10 days, drinking a few days after that.

EDIT: Start another batch of it at bottling time!
