When I use my own extract receipe the head and carbonation out of the bottle is minimal. I use 4oz ov cane sugar boiled in 1 cup of water for a 5 gal. batch. The strange thing is if I use a kit from MoreBeer the carbonation is fine. And if I do a partial mash it is almost over carbonated. I use the same amount of sugar for each. Can someone enlighten me why the difference occurs?
