I'm looking into creating a wine with the least amount of flavor profile generated from the yeast. What is a very clean wine yeast? I would assume it would be a white wine.
I'm not looking for fresh, fruity, woody, or any other aromas. I just need it to produce the alcohol and a very small amount of wine like flavors.
