Hi all,
I am getting rady to brew my next batch and am looking for some input as to an appropriate yeast. The recipe I am using is :
5.5lbs light DME
1/8lb roasted barley
2oz Cascade hops
1/2oz Hallertauer hops

Target OG is 1.038

My main concern is that I will have little control over fermentation temperature. I can expect the temperature to range between 68 and 78 degrees (quite a large range, I know). My options for yeast are Nottingham, S-04 and S-05. Of these three, which would be my best choice?

Depends on what you're after. Notty is good to 70 F. S-05 is good to 75 F. S-04 is good to 70 F. No yeast will be optimal for 78 F. You will get off-flavors at those temperatures. Some Begian style yeasts might work, they produce the desire esters at those higher fermentation temperatures. I would do whatever you can to ferment no higher than 68 F, if you must use the yeasts you mentioned.
