I was wondering if I can secondary a Mexican cervesa or other beer kit post fermentation my garage, it reads around 34-45 F or 1-7 Degrees Celsius depending on the day, if so what would be some advantages and disadvantages? I've heard of cold crashing for short term for clarity but this would be long term 3+weeks?

Those are pretty much lagering temps. The two problems that I see are, 1) making sure it doesn't freeze and 2) the 11 degree swing in temps is not really really ideal.
