I'm brewing an IPA this weekend and wanted to check the hops and timing out. I read on the AHA board that Mitch Steele likes Centennial and Motueka together or with Nelson Sauvin as well. I have 2.5oz of Motueka and about 8oz of Centennial as well as some Citra, Zynthos, 7Cs and Pacifica hops. I was planning on bittering with Pacific Gem as it is pretty high AA. I was thinking about using the Pacifica but could also use the other hops in the brew.

The batch size is 6 gallons.

Grain Bill is:
2 Row Base - 36ppg, 2°L - 13 pounds 83%
Munich (Light) - 33ppg, 10°L - 1.75 pounds - 11%
CaraPils - 32ppg, 2°L - 14 ounces - 6%

Which would give me an OG of about 1.073. I was planning on mashing at 152. The grain has been bought and crushed.

Tentative Hop Schedule

FWH - 1 oz Centennial 10%AA- ~16 IBU

Boil:
60 Min - 1.25 oz Pacific Gem 15%AA- ~44 IBU
15 Min - 1.5 oz Pacifica 6.1%AA - ~11 IBU

Flameout
1.5 oz each of Pacifica, Moteuka, and Centennial

Dryhop
1.5oz Centennial
1.0oz Pacifica
0.5oz Moteuka

Keg Hop (I use a large tea ball, can fit upto 1.5oz)
0.5oz Pacifica and 0.5oz Moteuka

This gives me about 75IBU which is right about what I want. Does anyone think I would be better off substituting the Pacifica for the Citra or Zynthos?
