There doesn't seem to be much info out there on brewing with sorghum. Anyone have experience with it?

The place I work grew a bunch of sorghum, which we are pressing into syrup. We're clipping the heads off for chicken feed. One of my coworkers eats a gluten free diet, so I was going to snag some of the heads to malt and then brew into a batch of beer for her. I've never malted grain before but I'm an experienced all-grain brewer. Can i malt sorghum according to directions for malting barley at home? Can I mash the same way? Really excited to try this, as it is organic, local, and awesome. She's a big supporter of my brewing, growing some adjuncts on the farm, and maybe barley next year! So, I'd like to do this for her if I can figure it out.
