I've tried capping twistoffs with a hand capper and it just didn't work for me. I agree it doesn't create a good seal. Though maybe there are better quality cappers then what I have. But bottling in twistoffs can be done! With my bench capper, I've not had any issues with twistoff bottles...

The twist offs i use are thinner than pop tops, but have been working fine for countless batches with a bench capper. Ive never broke a bottle this way and have always sealed properly.

Yup make a small starter. If it seems sluggish, what I've done in the past is just let it finish, and step it up.

Yeah that's what I do. Turn it away down -almost off, then slowly back on until hot break is done.

I left mine on the lees for over a year - I can't detect any off flavors. Racking wont hurt, but isnt necessary with this recipe. Just had one last night from the same batch which was 3 years old, and it was very tasty.
