I was worried about it being to sweet. I like Sammy Smith OS don't want a sweet mouth taste.. I don't want the citrisy taste in it either. I was just looking my in stock hops that had a slightly higher aa %.
I am making a Oatmeal Stout kit today from Midwest Supplies. I am a little worried about the low bitterness from the fuggles and am thinking about changing to cascade to up it a bit. Thoughts?

Take a gravity reading. If it stays the same for a few days its done. But give it time. Patience only makes your beer better. I let mine sit almost 2 weeks before I check on it.
Get some tubing and fit it to the air lock and the other end and drop it in sanitizer or vodka. You to set up a blow off tube. Congrats on the active fermentation!
I use dishsoap right after drinking then I run my bottles through the dishwasher on a sanitize cycle with no soap and have not had that issue, yet at least. It does sound like soap, but post your temps.
That is good. Sign of a vigorous fermentation. That burn at the bottle is not a huge deal, you might get a little off flavor but you probably wont notice it. Probably from adding the extract all in the beginning.
Did you taste it? I like to taste at each phase of the beer.

Brew all your ingredients in one pot 2 to 3 gallons then mix it with cool water in the fermentation bucket. The tube of ice water would create a home made swamp cooler, as long as it kept the temps consistant it should work fine.
Just took a gravity reading of my Helles. 1.02 at 68° which would mean almost 5% abv which is exactly what was expected even though I screwed up the mash. :mug:

I made a helles with W1007 last Wednesday, the airlock didn't bubble much at all. But when I popped the lid to take a gravity reading I got a nice wiff of fermented wort and a nice krausen. I used a started so I was a little worried that I saw no bubbles. But the yeasties did their work...
Pinging as well. I just popped my first bottle of my first original recipe IPA. It too was a bit darker then I expected. But I dry hopped on 2 oz of simcoe and got a nice pinny flavor in the beer. Tastes great!
Just popped the first bottle. Has a huge piney flavor but tastes awesome! I am very happy with this brew. It is dark and malty but still an IPA.
