The OG was about 1.057. So, I'll check the SG before I secondary. 75% atten would make it 1.014, it'd be nice to be a little lower than that. Hopefully I'll get a higher attenuation.
I'm going to move this to secondary. Would adding some adjunct (corn sugar, honey, etc) be a good idea to help dry it out? If it is a "bitter" I suppose it should finish dry.

How would dry hopping the saaz in secondary for 1...
I think I'll lessen the recipe a tad...make it a blonde...do a trip next time. And I switched the hops a bit. Still thinking the same yeast.

How should I go about feeding this monster? Should I do 4 gallons without the candi and 1 lb DME? Then boil those up and add them at secondary?
Would it be advisable to pitch to smack packs?
