Oldsock- good point. I'll just check the FG, if it's 1.014 or lower, I won't do anything. Thanks!

I would love to, but my stove won't get 5 gallons to a rolling boil, it can only do about 3. And I don't want to move outside just yet.

Good point. But wouldn't lowering the FG "dry" it out a touch by altering the OG FG ratio?

The OG was about 1.057. So, I'll check the SG before I secondary. 75% atten would make it 1.014, it'd be nice to be a little lower than that. Hopefully I'll get a higher attenuation.

I'm going to move this to secondary. Would adding some adjunct (corn sugar, honey, etc) be a good idea to help dry it out? If it is a "bitter" I suppose it should finish dry.

    Belgian Triple hops critique

Would Saaz and Spalt Select both at 0min be too much? Or compete too much with each other?

OK, so I'm calling this an "International" ESB.

lake superior brewing company masabi red ale hops

I was thinking about that, but the reason I want to know is I want to be sure I never brew that combo of hops, it's pretty nasty...IMHO.

    Belgian Triple hops critique

I think I'll lessen the recipe a tad...make it a blonde...do a trip next time. And I switched the hops a bit. Still thinking the same yeast. How's this: 6 lb Northern Brewer Pilsen LME 1.5lb Candi Sugar, Clear 1lb Briess Pilsen Light DME .25 lb Biscuit Malt .25 lb Caramunich II first...

    Belgian Triple hops critique

How should I go about feeding this monster? Should I do 4 gallons without the candi and 1 lb DME? Then boil those up and add them at secondary? Would it be advisable to pitch to smack packs?

would 3lb of candi be too much?

    Belgian Triple hops critique

I suppose I could. I'm just looking to use up 3/4# of each that I have laying around. Perhaps I should cut it to 1/4# each. Are biscuit and Caramunich II really going to add much flavor to the triple?

    Belgian Triple hops critique

I got this of the Wyeast site: Produces intense esters and phenolic characteristics with complex fruitiness. Does not produce significant amount of iso-amyl acetate (banana esters) or bubble gum esters typical of many yeast of this style. Phenol and ester production are influenced by...
