Just checked the cheaper Mainstay ones at Walmart. A magnet does not stick to the bottom. Can you check yours and report back? These do not seem induction capable.

Thanks guys. Regarding the temp...I only chilled to 60 because of a time crunch. I checked my log and I did actually have my fermenter chamber set to 54 ambient. The temp of the wort was also at 54 when the airlock started. I then bumped it down. Hopefully I avoided the esters.

It does seem odd that the conventional wisdom of 10:1 is a bit misleading when you account for boil off. Or am I misinterpreting the conventional wisdom?

Measure 100g of DME, stir into water
Boil 10 minutes
Pour into flask
Cool in sink ice bath
Resulting starter size = 800mL
