Ahh gotcha, and for advice, I always put on a blow off tube for the first 3 days to avoid foam overs, sometimes a real active batch will still come out the tube, but much easier clean up than foaming out the airlock
The rate of bubbles coming out will vary with amounts and types of sugars in the wort and more importantly, the strain of yeast. It is not a good indicator of anything TBH. I have done light Hefes that bubble and foam up like crazy, and a pretty strong doppelbock I poked at with a stick to see...
Simple fix, carboys are cheap, brew three to four weeks in a row. You get a variety and will have enough to last you for awhile, by the time you are down to around 7-8 gallons left, repeat process
Deschutes is awesome, they make a very good representation of every beer they make. If you like a style, you will like their version of it. Red Chair, black butte, Abyss and Hop henge are 4 big stand outs for me.
Bitburger_ Not my fav, but got a case as a thank you gift and has a little bit of nastalgia for me since I was stationed in Germany in the Air force very close to bitburger. I also but a bottle of my hoppy pale and brown sugar scotch ale in the fridge, ein bitt will hold me till they cool

Try to shake and agitate the yeast first and give it more time. Add more yeast later if you must. Just try to minimize the exposure to oxygen
Also, start doing starter kits for your yeast, especially if you are doing big beers. I also suggest switching to wyeast smack packs if you can over dry...
