    I learned that lesson with my swing top bottles. They were soaking in the sink on bottling day, and turned from shiny metal to a matte grey. I kind of like the look so it didn't really bother me, but it was a lesson learned.

    I added my last batch at a strike temp of 158 which the cold knocked down to 150ish at mash in. So you are correct, the water gets heated hotter than the mash in temp. The "right" strike temp is a moving target if you brew in the un-heated / cooled garage like I do.

    Welcome to BIAB!! I just switched myself from extract brewing, and I couldn't be happier. Definitely do a trial boil to find your evaporation rates. I took readings at 60min and 75min just so I could document the different rates and times. I hear nothing but rave reviews for the bags...

    Lager fermentation with W34/70

    I used 34/70 in my Oktoberfest and loved it. 52-55F the entire time, warmed up only on the day before I transferred it to the keg. Such a great clean/crisp flavor. I will be using it again for my Fizzy Blonde brew coming up. :mug:

    I always thought it was better to have a little less, and add water if needed vs having to much and having to boil down some.

    One good thing for beginners (like me) might be to incorporate some quick notes. ex.. when looking at the water profile, if you scroll over Ca, Mg, Na, SO4 etc, I think it would be helpful if it loaded some kind of quick briefing of what that mineral adjusts.
