    3 weeks is typical, but longer is fine. Just check the gravity to be sure it hit the target before you bottle it.

    Just an update. Got the fermenter up to 65f and re-pitched a packet of US-05. Five days later, no change in the gravity. What gives? Could it really be done at 1.030?

    Nope. Stays at a consistant 61 - 63. I'm pretty confused about this situation.. Never had this problem before.
