Adding Cinnamon Sticks to Hard Cider

Thanks Doctor - Limited experience on the cider front, but liked the results (mostly). What temperature does pectin set? And what non-fermentable sugars/sweeteners would you add for just that little bit of sweetness? Again, I like the outcome of MA33 + mulling spice, but just for the sake of...

Adding Cinnamon Sticks to Hard Cider

That's part of the reason I've been working in smaller batches (1-3 gal). If you're careful racking it off that yeast, a "secondary" would prolly do the trick without crashing the yeast out.

Adding Cinnamon Sticks to Hard Cider

I ferment out just like beer (let the yeasties do their thing). The MA33 does a nice job of maintaining apple flavor and I generally cold crash for a couple days to bring the yeast out of suspension before bottling. I'll then get my priming sugar ready and add a little bit of yeast to the...

Adding Cinnamon Sticks to Hard Cider

I've had really great results heating the cider to pasteurize it and having some mulling spices in a muslin bag while doing so. I cool it afterward just like I would wort (usually ice bath since I work in smaller batches) and have had great results with Vintner's Harvest MA33 strain. That...

    Chocolate Chili Pumpkin Porter?

There have been a number of pumpkin discussions lately. I believe in terms of a canned answer to your question, a number of people use Libby's canned pumpkin.

    Chocolate Chili Pumpkin Porter?

Looking at your recipe, it seems there's a lot going on and a few bits are a little heavy handed (ex. cacao). IMHO, I'd use a bittering hop addition only and (ditch the two late additions) so that the flavors you're trying to feature come through. I also wonder how the pumpkin pie spice will...

Great American Beer Fest - Denver CO

I was talking about when checking in for a volunteer session (not as an attendee). Sorry if that was misleading. Since I work brew crew, I get plenty of time to taste and still run into palette fatigue.

Brewing with Ergosterol and Safflower Oil

I'm not a chemist, so I understand very little of that middle paragraph... But are you worried about head retention? As I understand, fats/oils kill a good head.

Sorry guys had to go to back to extract!

I love living in Colorado! Temperatures in the 90s are still "cool" enough. Temperatures below freezing make you wanna light that propane burner. All in all, lots of acceptable brew days!
