    Honeycomb

So we went from this... ... to this.

    Honeycomb

Well yep, the honey in the comb mixed with the rest of the mead over night making the comb float to the top... pretty un-chique. Certainly not for the discerning hippie-brew connoisseur! Nevertheless though I've since sieved off the comb and the result is an extremely delicious back-sweetened...

    Sweet Berry Mead!!!

Haha, it gets a bad rep for the rain but I've had some of the barmiest of UK summers in Manchester... then again being from the highlands my standard of barmy is pretty low! Our water's hard too, loads of minerals from the Peaks but it tastes good. Nevertheless I just use ASDA spring water...

    Honeycomb

Right then! Let the great honeycomb experiment commence! :rockin: I've cut some slices of honeycomb and added them to a mead thats been bottled for about a week with the intention that the honey in it should back sweeten it and mask any of those nasty lingering sorbate/sulphite flavours...

    Sweet Berry Mead!!!

Ah-ha! Brilliant, I will certainly be using a bucket next time round. Its my first melomel and I think I severely underestimated just how much the yeast would love all those berries. It seems to be a bit more stable now though so I might hold off extracting any of it for the meantime as while...

    Sweet Berry Mead!!!

My gallon of Sweet Berry Mead melomel... Stewed Forrest Fruit type tea infusion in 2/3 a gallon of spring water. Added ~1,600g (~3.5lbs) of honey. Then added 500g of frozen summer fruits (blueberry, strawberry, blackberry, red and blackcurrant, raspberry). Added a tablespoon of yeast...

Show us your Mead in a photo!!!

The current gang complete with aptly novel names... from screen left to right: (1) No. 1 Nectar; my first short gallon mead after stabilising it, then cold crashing it in the freezer, and finally adding positive and negative finings. (Currently bottled in some recycled Leffe and Grolsch...

    Honeycomb

Hey all, One of my gallons of mead is due to be bottled soon and I have some honeycomb that I was thinking to add to some of the bottles... has anyone tried this before? It's edable, packaged honeycomb in honey but I'm concerned the waxiness might give off some bad flavours? I definitely want...

    Hot Bath

Phew... Great, many thanks, I've wrapped it up in a blanket for now as I don't have any sleeping bags to spare. Will leave it to simmer down over the weekend and see how it shapes up!

    Hot Bath

Greetings all, I've had a 1 gallon demi-john of mead on the go for about two months now. I used about 3,527 lbs of honey, a table-spoon of yeast nutrient, a tea-spoon of dried active yeast, have racked it twice and it seems to be clearing nicely and tastes pretty good. However, recently...
