I ran into your issue a few months ago and talked to the guys at the store about it. Their response is full boil= good (hop utilization, etc) but mash with the water amount they tell you.

My plan was to use a coil element stove and dunk the flask in a sink full of ice

Has anyone used 2 White Labs vials for a high gravity beer (1.084) as opposed to making a starter. One of the guys at AHBS recommended it to me said it would work just as well.

So I checked my FG today, kept hoping the bubbles would die off and they never do.
1.012 exactly as the recipe said but I still have a lot of bubbles, almost like carbonation. Or Apfelwein fermentation
They go away if I drop the temperature on it but immediately come back around 70 degrees...
It started about a week after going to secondary and has not let up
Only a few degrees, crazy Texas weather goes from cold to hot/AC to heat definitely nothing drastic always between 66-73
I moved my Nut Brown Ale from primary to secondary on Wed Nov 21. This was after 10 days in primary, fermentation started about 21 hours after brewing. Did not take FG because I was rushing to get out of town and could not find hydrometer (hidden under previous beer recipe) but felt solid that...
I didn't fill my bottles very well the first time- only about 9-10oz per 12oz bottle, and was similarly worried but beer turned out fine.
I was so happy to hear to carbonation when I opened my 1st bottle
I brewed an AHS American Red Ale mini mash for my first beer and was very pleased. Awesome color, taste, smooth beer, and the mini mash feels more involved with minimal more work.
Got to emphasize again how cool it was to have good tasting red colored beer.
Been thinking of doing a stout from AHS for a while but have been holding back because of reading about long fermentations. I am planning a 3rd beer but it has been tough waiting the first 2 out so I would not go with a stout 1st based on my experience.
