I use a brew bag in my mash tun and love it. Full disclosure though: the bag does sit on top of my original SS false bottom. What I love about the brew bag is the easy clean up. Super easy and fast! Pull it out, dump the grains, rinse the bag.
I think what brewcat means by your hydrometer being calibrated is: Does it read 1.000 in 68 degree water? If it reads higher or lower, you will need to add or subtract that difference to your temperature corrected reading.

I agree with those who suggested bottling at first. Invest in kegging once you are sure you are in it for the long haul (and as obsessed with it as most of us are). Plus, you will appreciate kegging much, much more after having bottled a few batches...because bottling sucks.
I bet that beer will taste great! I would take kind of an "is what it is" attitude at this point. You know, RDWHAHB. Bottle condition as you normally would. Like flars said, if you're concerned about yeast, grab a little extra from your carboy.

If it comes out of the poppet on the corny itself, then it's doubtful you have a clogged serving dip tube. Only other things to check besides freezing is a clogged shank (maybe it has some junk in it?).

I can ferment one 5 gallon batch at a time in my 7 gallon SS brewbucket in a small, temperature controlled, chest freezer. That's enough for me right now.
It has happened to me before right after adding the whirfloc tablet. Remember, it's a clarifier designed to get all those pesky haze creating proteins out of solution. I bet it was magnified by the fact that you had to restart your boil and get everything adjusted again.
