I would always use add it to the secondary 3-4 days prior to bottling. no moving the carboy after that. Good results and pretty clear beer.
No experience with kegging.
I've heard of Walnut having some potentially dangerous compounds (relating to consumption), but my biggest warning is that it's such a beautiful wood that it would seem like a waste to use it in a beer.
Elysian is 51% owned by ABInbev if you care about such things. Redhook is also in bed with AB via distribution (again, if you care about such things).
Black Raven is one of my favorites, though you do have to go to the other side of Lake Washington (well worth it). Brouwer's is also great...
They serve their beers in as small as 4oz pours, though im sure they'd giver you a taster. When I was there, that's all I got. Think between the table we had every beer. The Crystal Hero was especially nice,
In Dublin, find 8 Degrees Brewing and Galway Bay; both are great breweries making great beers. I'd recommend going to The Black Sheep, it will have both and it's a great beer bar with a few pump casks.
I rarely cold crash due to the same space issue, but often use US-05. I use gelatin at room temp about 4 days before bottling with good results. US-05 has a tight yeast pack, which is one of my favorite characteristics of it (especially since I bottle condition); that and the nuetral flavor.
Nevermind. I just did a conversion and the volume seems fine. It may just need more time to carb. Did you create a simple syrup to prime, or did you add the sugar as is? Was it mixed in the beer well before bottling?

3/4 cup of sugar for the whole batch? I dont know the volume to weight conversion, but that seems low. You could get some carb drops, half a drop per bomber.
