I think that the lemongrass flavor would be more noticeable in the hefe, than the citrus/corriander in the wheat ale, since lemongrass is pretty strong.
You are better off waiting, rather than taking it out of the fermenter too soon. From what you posted, I am guessing you aren't doing secondary, so I would suggest another two weeks.

But seriously, just choose sources that are reliable, just like you would with any research. HBT is of course a good place to start.
I know you said you buy 5-6 recipes worth of ingredients at a time, but you may want to consider buying less at once. I typically buy 2-3 at a time, which saves on shipping, but allows me to use it before there is a chance it will go bad. How long do you plan to keep it?
