    i agree with the potential problems. After thinking about it, I could have some back flow into the rest of the house. I would have to have at least two one way valves to prevent that.

    Good catch. If I would have plugged the grains into a calculator, I probably would have figured that out. Bigger beer than I planned. Maybe I'm not describing it correctly, or didn't provide enough detail. I was still using a bucket with sanitizer for the blow off, so it wasn't being exposed...

    UPDATE 2: Apparently there wasn’t much fermentation still occurring. Day 10 since fermentation started, and the gravity is 1.019. Five points from where the recipe said it should bottom out. Still...that was a fair amount of sugars digested from 72 points down to 19. Any suggestions? Too late...

    I am. Call me very busy or just lazy, but I have left the beer in the unitank chilled to at least 38ºF for a few weeks. Like I said, this last one is only partially naturally carbonated, and it still has the odor from the head.

    Crash cooling issue

    Ran the chiller on my second batch, an Irish Red Ale. Crash cooled it right to 33ºF without a problem. I feel that this is largely due to the alcohol content of this second beer. First one where I had trouble was only around 4%, but this Irish Red Ale is about 6%.
