    Suggestions for fermentation that went over 80 degrees

    I was just freaking out cause its the first day of fermentation & I didn't know if this would set the mood for the beer, or if the yeast would become dormant from being cooled after being so hot. Thanks so much guys for your knowledge.

    I topped it off to 5 gal, aerated, then took the reading. & as far as i know, it was about 70 deg when i took the reading. It was hard as hell & took forever to get the temp down 2 weeks ago.     I also heard that adding coffee will decrease the head retention, so i'll probably use about 3/4 cup of priming sugar when we bottle.

    I started the boil with 5 gal & it boiled off a gal. I used 9 lbs. of liquid & 1 lb of dry (if that makes a huge difference) I expected it to be a bit higher also. this is our 5th brew so any suggestions willl be noted. Thanks

    1st beer tastes WAY too strong, need help

    After 5 weeks in the bottle....OH MY GOD!!! what a difference! all the flavors appeared in the front now, with a much smaller alcohol finish. a few more weeks in the bottle & this stuff don't stand a chance. Thanks guys for your reassuring wisdom & advise

    Wheat extract question...

    HA, thats the same reason i'm brewing it. the recipe calls for bitter orange peel, crushed coriander, & a spice of my choice (ie. anise, cinnamon, vanilla, pepper, or ginger). I think my lhbs might carry 40/60 by the pound. I think I'm gonna get that just to stay true to the recipe.
