I also have finally tasted my easy "burnt" street..not too bad altho I've never even had an easy street.. Kind of an overwhelming flavor from the grains that spilt inside but still drinkable light and crisp..I will definitely brew this clone again to get real justice out of the recipe..if anyone...

To ur first query about dme I always use 5 to 6 lbs for fave gallons possibly less depending on what I'm brewing. Next I recommend some so u can drink that ish..I think ur solution would work but I suggest getting some starzan from lhbs..saves time more iffeciant and to the last I've found over...

Ya when I bottle by myself I need good elevation so my bucket goes on top of my fridge so once I start I can't get beer out while I bottle. The inner genious in me decided to now keep my beer in a cooler not the fridge for better drinking access sometimes bottling can start to get boring after...
I think you just have a really good batch.. Bottle it up bro it will mellow out... Same thing went on with my dunklewiezen I brewed a couple months back I just bottled it up stuck it under my better brews checked on it recently and it came out fine.. Not my best nor my favorite style but...
