Is your probe reading air, or do you have in something? Never really timed mine, but seems to be hours between cycles. I keep my probe in a plastic bottle filled with water.

On a union, you don't mess down the npt threads after install. The big "nut" is used to remove and install later. It is a machined surface that does the sealing and no thread tape or dope is needed.

Pipe union would be the easiest way. A union will have no more chance of leaking than a any other pipe fitting in the system. Also a union will allow for quick and easy removal of coil for cleaning. You should be able to get brass unions locally.
You racked to the secondary way too early. Hydrometer readings are the ONLY way to know how fermentation is going. You CAN NOT judge fermentation by airlock activity. There is most likely nothing wrong with the beer. I would let the beer finish fermenting and bottle after a few more weeks.
When you open up the tank valve, are you hearing a click? If you are, you are tripping the surge valve. Is your regulator adjustable? Mine is and if I have it too high it'll trip the valve.
I have a 2A with the hopper. Crankandsteins are very well built and customer service is awesome. I have run a few hundred pounds through mine and have had no problems. Adjusting the gap is easy on the 2A.
In a nut shell, multiple rollers give better crush of the grain.
