I brewed the Hopdunk back in February when Simcoe hops were still available. I also added the 1% boost. If you like Hopslam, you'll like this one. It's definitely a big beer. A Fall sipper. My final ABV was 10.5%.
Make sure you make a good starter. Give it time to carbonate.

Well, the taste was that clovey, banana complexity that is seen from German Hefes. I will know a little better once carbonation is complete. I'm still learning to trust my palate when I try non-carbonated beer.
In the bottle for 5 days so far. Unaffected by the Windy city blizzard.
I don't think that the 60-65 would affect your beer either way. I've rested my beers in both temperatures. As the winter cold hit, the basement got colder and the 55F temps were easy to hit. I have not had any beers go bad.

I recently dry hopped an IPA with Ahtanum hops for 14 days. They were pellet hops. The grassy notes were not present but the piney, citrusy nose was very pronounced.
It all depends on your preference or taste. I wouldn't risk dry hopping for more than 14 days.
