IIPA kits: Which one to choose?

I brewed the Hopdunk back in February when Simcoe hops were still available. I also added the 1% boost. If you like Hopslam, you'll like this one. It's definitely a big beer. A Fall sipper. My final ABV was 10.5%. Make sure you make a good starter. Give it time to carbonate.

    Other hobbies besides homebrew..

When I'm not brewing... I'm honing my wine skills. My wife and I have had over 100 different varietals (read: grape varieties) in wine form. And as always, I'm cooking the food to pair with the beer or wine. Technically, I live with a corkscrew in my hand and feel comfortable around a burner...

    Dry hopping/Clearing

The cold spot in my basement (53F) was amazing at cold crashing my hops.

    Dry hopping/Clearing

I made this same recipe in November. I dry hopped for 13 days. I have some hop heads in my family. It did take some time for the surface to clear but it helped that I would tip it slightly to immerse the hops. I never really got all the hops to drop but I was not worried about that. I racked to...

    Hefeweizen FG under 1.005

Well, the taste was that clovey, banana complexity that is seen from German Hefes. I will know a little better once carbonation is complete. I'm still learning to trust my palate when I try non-carbonated beer. In the bottle for 5 days so far. Unaffected by the Windy city blizzard.

    Questions about fermentaion steps and...

I don't think that the 60-65 would affect your beer either way. I've rested my beers in both temperatures. As the winter cold hit, the basement got colder and the 55F temps were easy to hit. I have not had any beers go bad. I've also experimented with the hydrometer. I've taken the gravity...

How long is too log to dry hop?

I recently dry hopped an IPA with Ahtanum hops for 14 days. They were pellet hops. The grassy notes were not present but the piney, citrusy nose was very pronounced. It all depends on your preference or taste. I wouldn't risk dry hopping for more than 14 days.

    Hefeweizen FG under 1.005

Thanks for the advice all! 1. Yes, It was a wheat LME 2. A few days prior to bottling, we had the in-laws in town and the thermostat was raised to 71F. Sadly, my HEFE was resting upstairs where the hot air gets trapped. It might have been in a 75F room during the fermentation. 3. I have...

    Hefeweizen FG under 1.005

I just brewed my first Hefeweizen. Not my favorite style but the wife needs to have her fix too. This is my 5th batch. I went through the whole process and saw that my FG was much lower than my target FG. Should I be worried about anything? Extract Brew- 6lbs LME, 1 lb light DME; Steeped 8oz...
