    Awesome analogy. The oyster beer didn't have oysters in it, no idea about the name. They used a ton of anise or whatever licorice comes from and it actually gave me a stomach ache!

    Can I pull this off?

    I just got married in July and had 30 gallons for 150 people, no cash bar. I had about 5 gallons left over I had a Scottish 80 schilling that the crowds loved. I based it on the northern brewer recipe. It was AG but It's so simple that I'm sure the Extract/steeped grain would be great.

    My bad carrotmalt... Funny enough the only dimmer I've messed with is in my house, which was built in the 40's... Thanks for the info GNBrews, I should have known that!

    AC, DC, it doesn't matter with resistance. EDIT: BAD INFO BELOW..... The dimmer is targeted to handle 120V so you may find that the adjustment is 10X coarser than you want it to be.

    Judging from the size of the transformer in your picture, you're going to need a bigger transformer. A 10amps@12vdc transformer is BIG. You should probably take a look at how much switch current will be pulled from your transformer. Your filter caps will take most of the switch current but...

    I think DavidR probably has the coolest looking cooler I've seen on this forum... That thing is ridiculous. How turbulent can you keep the coolant? Props to you sir. This is the first non-IC I've seen here that can be inspected visually.
