    Oh gosh...biggest noob mistake ever.

    Once the fire is off, it's all fair game :mug: p.s. I made the same mistake on one of my first batches, though I had inexperience to blame (I think it's an experience rather than intoxication thing). The beer turned out just fine.

    California Ale Yeast. WLP 001. That's what I've been told, at least, and my Sierra Nevada clones have tasted pretty spot-on (that is...when I don't mess with them in some random way, which I usually do).

    Your beer will be fine. No worries. But for future reference, be careful pouring hot wort into a glass carboy...water always goes first. The thermal shock of hot liquid on glass could cause it to crack/shatter. It actually happens...lots of threads on the board about broken carboys...

    No tax on grain, hops, or yeast (I think) in Florida either. That's about the only good political, tax, education, or government related thing I can say about this state.

    Since you're brewing on your stove, I'd start out with between 2 and 3 gallons, then top off to 5 at the end using bottled spring water (though, I've topped off with tap water before with no ill effects). There's no hard and fast rule to this, other than the more water you boil the better...

    Homebrew Den in Tallahassee is great - and they just moved into a new, bigger place. The best thing about the place is the staff. They're really nice, knowledgeable, and have spent lots of time with me helping pick ingredients. They also have a website, but it kinda sucks...hopefully...
