    Bottling question.

That will cause splashing and can introduce oxygen which you do not want to do at this point. Use a racking can or a bottling wand to bottle. Check out this thread. https://www.homebrewtalk.com/f35/bottling-tips-homebrewer-94812/

Adding honey to Irish Red Ale

I did an Irish Red all grain and added 1 lb of honey at flame out. Worked out well. Honey will increase your gravity and the potential alcohol in the beer.

    fermenter with a spigot

That is your bottling bucket. People have used them to ferment in however you will need to rack to another bucket to bottle unless you want a lot of trub in your bottles. I would say, ferment in your carboy for 3 weeks, don't transfer to a secondary and rack into your bottling bucket to bottle.

Why is Ice for cooling wort bad?

I used to top off with tap water, as the ground water got warmer in the summer I started making slush water with pre purchased gallon jugs of spring water. Worked great for me. I now have an immersion chiller so no need to do either. There are a lot of different ways to do things and a lot of...

My wife thinks i'm going crazy...

how to get a higher abv%

Yes, anything on draft or sold in a grocery store can not exceed 4% ABV. or 3.2% ABW (Utah measures it by weight). Does it suck? Sometimes, but we know we can go to a brewery after work and have a multiple beers with friends and not be drunk. Like having a session beer. And if we want higher...

    Coffee Stout.

I added cold brewed coffee to my oaked coffee porter, I am actually drinking one now. I used 1 cup coffee to 4 cups of water, I believe it made about 3 cups of coffee. I added 2 cups of the coffee to 3 gallons of beer. With a stout you might want a little more. Used Starbucks Tribute ground...

    New with questions

You won't need to bottle for about 3 weeks. I get bottles from local restaurants. Make sure you get the pry off and not the twist off ones. 22 oz bottles work great. Look on Craigslist also.

'Get Really Drunk Off Gummi Bears' (link)

I agree with the rum. I also thing that if you soak them for a few hours , maybe 4 it works better also. We had 3 day soaked vodka infused ones last year at tailgating and too them into the football game and they basically melted in our pockets. It was as sticky mess.
