    Adding honey to Irish Red Ale

    I did an Irish Red all grain and added 1 lb of honey at flame out. Worked out well. Honey will increase your gravity and the potential alcohol in the beer.

    That is your bottling bucket. People have used them to ferment in however you will need to rack to another bucket to bottle unless you want a lot of trub in your bottles. I would say, ferment in your carboy for 3 weeks, don't transfer to a secondary and rack into your bottling bucket to bottle.

    My wife hates the smell, so I brew exclusively in the garage. I don't think she really likes me brewing as much as I do, or cares that I am as into as I am. o well I like spending time in the garage. If I keep a cream ale around she is happy but now she wants it on nitro.

    You won't need to bottle for about 3 weeks. I get bottles from local restaurants. Make sure you get the pry off and not the twist off ones. 22 oz bottles work great. Look on Craigslist also.

    I agree with the rum. I also thing that if you soak them for a few hours , maybe 4 it works better also. We had 3 day soaked vodka infused ones last year at tailgating and too them into the football game and they basically melted in our pockets. It was as sticky mess.

    Temp. allowance of fermenting buckets

    I use a racking cane as a dip stick to measure my wort collected. marked on the side with a sharpie. Gets me really close, maybe not perfect but works for me.
