I use American Oak cubes about 2oz per batch of 5 gallons. I soak the cubes in Knob Creek for a week then poor of the left over liquor and add the cubes to secondary for usually a week. I do agree with the tasting if you want check what kind of change it makes to your beer. I seen some post here...
I just brewed a ESB this fall that turned out very good. I used 2 row,120,40, biscuit, very small amount of Black malt. Also went with 1098 British ale yeast and it gave a nice clean flavor. A good beer to drink any time of the year. Good Luck

Brewing the New Ipa today moved the 35min to .5oz of citra and did simco 1oz at 15 1oz Amarillo at 10 1oz Amarillo at 5 1oz Centennial at 0. Keep dry hop the same. I will let you know how it turns out.
I brewed this last night I put in 2oz of Bakers chocolate and 2oz of nibs. I steeped 2oz of Sumtra for 8min. I used some wheat instead of all the oats due to not having enough oats. I also changed yeast to a 1098 that I made a porter with in the fall. I plan to soak 3oz of oak chips in Knob...
Thanks for the input the yeast is a reuse of a ESB that should be ready to go. I will try and brew this next week. I will think about the 35min change what do you suggest for a different hop or just get rid of the 35min altogether.
It has the right malt profile and Belgain Flair but it is a little bitter. I think I would cut out the .5oz 60 min and the .75oz 30 min and see where that puts the IBU. It just does not balance at the end. The color is good.
