2.) Which Chocolate Malt are you using? US or UK? There's a difference in SRM between the two.

I've never tried a stout or porter and would like some suggestions. I dont want to brew one until Im sure that I actually like the style. Maybe something mild to get started? Then maybe something a little higher in the IBU/ABV range. I would love to try an Oatmeal Stout, for example...

I'm pretty sure the rice extract has something to do with it. Quick question...how in the world did you fit 7 gallons of water AND 11lbs of grain into an 8 gallon pot? How much headspace was left? How full was the pot when you started the boil?

Looks simple enough to achieve a quick turn around. Ferment 10 days and check the gravity. If it reach the target gravity go ahead and keg it. Let it condition in the kegs under a blanket of CO2 and force carb/chill it the last few days. Should be good to go.
