    Fermenting with dry yeast

You'll get a bunch of fusel alcohol that'll give you splitting headaches. Rick

Which yeast for my next batch?

Ugh. I wouldn't use the bread yeast. But then, I wouldn't use an unknown yeast either. Good, known strains from Fermentis and Danstar are reliable and inexpensive. Easy to use as well. Rick

First Brew, no time for a starter! :[

Yep. Good advice and a good yeast strain. Rick

    Not loving S-04...

I'll be tasting later today the first batch I've made with S-04. It's a Best Bitter NB kit. Normally I use Windsor for bitters and like the result but NB recommended S-04 so I thought I'd try it. This batch sat in the primary for 3 and 1/2 weeks, then bottle conditioned for a month and has...

What do you all think of Fermcap?

I love the stuff. I can easily do 7.5 gallon boils in my 8 gallon kettle. To avoid boilover I use 4 drops. Then when it goes into the carboy I add 2 more drops and tho the initial fermentation may be vigorous, I don't get a messy blow off. In fact I've gone back to just using a bubbler, no blow...

    Morebeer took care of me.

    You're in luck! They make a 7.5 gallon version. :) http://morebeer.com/view_product/10775/103722/75_Gallon_Conical_Fermenter_-_Heated_and_Cooled Rick

    Carboy cap vs Auto-Siphon

Lorne, these are different items that do different jobs. I use both, I have the large diameter auto-siphon and also use the orange carboy caps. Rick

A great read on conditioning from MoreBeer!

And most likely so has Palmer's understanding of the subject. Rick

I can't believe I'm about to post this...

I had wondered about this as well. Thermometer paranoia is why I bought a Thermapen. :o Rick

    Superbowl beer choice

Just going to have a few of my pale ales, maybe a glass of bourbon, a few stogies along with wings, pizza and nachos. :) Rick

    5 months... Still fermenting?

Sure sounds like C02 to me. Rick
  14. F250

    What are you fermenting in?

Yep. Works on all carboys. Hot water and the prescribed amount of PBW and it basically cleans itself. Especially if you get to it shortly after racking out of the carboy. I use glass 6.5 gallon carboys. I'll stick with these till I get a stainless conical.:cross: Rick

    Yeast types

Do you have your temp control ironed out for lagers? Do you have a fridge to use for the long lagering period? If not, you be better off brewing ales...........to a prescribed recipe. Rick
