Interesting. I did not realize they changed the recipe. I was only at the Cafe once before the Fermentaria opened, so I'm not sure if I even had the original. Thanks for the insights.

I agree with a lot of what you're saying. The recipe here makes a great beer but it's definitely not a clone. It's reminiscent of HopHands, but if you have them side by side, it's very obvious which is which. Of course, my process could explain a lot, maybe I suck at brewing, but two main things...

Brewed at batch using oat malt today. Thanks for the tips on milling it fine/separately. I used 30% based on Jean's comments on Steal This Beer. From my listening, he didn't seem to specifically be talking about the milkshake series, but who really knows. He said they typically use 30-40% oats...

Yes sir. I wanted to see how much stuff is in suspension when they serve it. The answer is a lot. I poured a whole 16 oz can into a series of small juice glasses in one long pour. The can had been in my fridge for about a week. Here's the pic of all the glasses. If you can't tell from the...

Picked up some HopHands cans a couple weeks ago and thought I'd share this pic. This is what the last couple ounces of the can looks like after letting it sit in the fridge for about a week. The glass next to it is the non-dregs portion of the same can. Seems to be not only hop matter but a good...

That looks awesome. I just picked up some cans of Punge from the Fermenteria and it looks pretty similar (though hard to tell from just a picture). This is probably answered somewhere in the thread, but it's gotten really long... Do you guys force chill after flameout to get it to the...

    Tropical Northeast IPA

highly recommend this thread as well. its quite lengthy at this point, but you will learn a lot if you read through it (as the links inside). and i can vouch for the resulting beer being awesome. https://www.homebrewtalk.com/showthread.php?t=463439

Dried sour cherries: Sugar added or no sugar added?

Hmmmm, doesn't look like I can get fresh tart cherries here in PA right now. Guess it's off to check Target.

Dried sour cherries: Sugar added or no sugar added?

Fresh is a possibility. I was looking for dried because that's what Russian River uses in Supplication and I figured I could actually find some dried. But maybe finding fresh would be easier. Any downside to aging on fresh cherries for an extended period of time? Plan was to rack to secondary...

Dried sour cherries: Sugar added or no sugar added?

Yeah, I have a similar issue. Not sure where I can find sour cherries. Every package of dried tart cherries has oil added, which apparently is a problem. Anyone know of a source that doesn't include oil? Trader Joe's, Amazon, and Costco are all no's. Alternatively, any way to remove the oil...

Fermcap S: whole bottle went in

In my experience, Fermcap added to the boil will do little to control the krausen during fermentation. The boiling must deactivate it or something. But then again, I haven't dumped a whole bottle in either. I'd wager it's gonna drop out and you either left it behind in the kettle trub or it will...

TH's website lists it at 5.5% http://www.tiredhands.com/cafe/beers/ I do recall it being lower when I first had it around a year ago, but I could be wrong. I suspect the recipe evolves slightly over time though. Wonder if they use anything other than Pale Ale Malt and Oats? With 1318...

I ended up shaking the keg and the head is better. I heard that "hop oils create a CO2 barrier" theory before, so maybe that's what happened. The head is still not perfect so maybe it just needs a bit more shaking. Thanks for the suggestion.

Brewed this three weeks ago and it's pretty damn good. Thanks for all the work on the recipe! Now I need to get back to TH for a growler so I can do a side by side. I used 1318 for the yeast and subbed in Mosiac instead of Simcoe. One thing I noticed is HopHands is currently 5.5%. I believe it...
