Fear not, friends... rumors of my demise are greatly exaggerated! :cross:
I did find occasion to test the kombucha theory under appropriate conditions and found that there indeed seemed to be a quick and noticeable reduction in that annoying lightheaded feeling after consuming approximately...
I haven't been out to Track 7 yet... if I don't go tonight I probably won't make it, as the class dinner is tomorrow night and I'll be heading back to SoCal ASAP on Friday after class. A couple of the guys in class went over there and said they have pretty decent beer, but the facility is...
I'm going up (I live in SoCal) to do the Intensive Brewing Science short course this week at UC Davis.
Anybody else on the board taking it this year?
Anyone live near there that wants to grab a pint or 3 in the evening anytime Monday through Thursday? I was thinking about hitting Track 7...
I'm doing an EPA today:
9 lb Maris Otter
1 lb. C-40
0.5 lb Victory
Haven't quite decided on hop amounts yet, but I'm going Brewer's Gold for bittering and Fuggles for F/A.
Racking a beer through raw steel wool WILL leach enough iron into your beer to at least ruin the flavor.

Interesting... I was just talking to one of my professional brewer friends, and he asked me why I was even doing a secondary fermentation. I too made the decision to ditch secondary for a while - just crash chill after primary and package after a week or so.
I started with a Brewer's Best kit from my LHBS...

I've been doing all grain for a while now, but I still find most of the components that came in that kit useful every brew day.
I don't think it's sealed... you're supposed to be able to check out the vortex from the top - looks like it's open to me, and you would have to add water to it.
I say call and ask. If it's open, then I don't see any reason why you couldn't figure out a way to do a starter in it. Hell, I may...
I brewed a SN Pale Ale clone recently, deliberately holding the ferm temp in the low/mid 60's. Fermentation time extended to 1.5 weeks in primary, secondary for 1.5 weeks. The result was an extremely clean pale ale with very little yeast character, but also no off flavors at all. The hop...
That's what I figured, but I wasn't sure what I should be calling it. Considering it's really not brewed to style for either a Hef or a Dunkel, I probably shouldn't be referring to it as either...?
Maybe I'll just shut up and drink it... :tank:
