    Mold growing in my beer?

Waiting on my 10th brew right now. The other 9 have all turned out great. I racked over to my secondary about 1 1/2 weeks ago so I'd have the primary ready to use again. This was about a week after brewing. After a day or so, I noticed a bit of stuff floating in the beer. No big deal...

    any fellow TX brewers?

Until I joined this board, I didn't realize how spoiled I was having AHS about 5 minutes from my house! Brewing since April and I've cooked up: Double Chocolate Stout, Honey Hibiscus Wit, Texas Kolsch, Texas Red Ale, Imperial Agave Wit, Oaked Porter, Texas Blonde, Northdown and Bound Pale...

Another winner from AHS in the making

bdupree - No lactose in the liquid mini-mash version I did. trevor - The Blonde is very good. I made the extract version, based on the staff rec. They said it was one of the few recipes that turned out better from the extract than mini-mash. They also suggested adding an ounce of lemon grass...

Another winner from AHS in the making

It was a sad day when my AHS Double Chocolate Stout, beloved by friends and family alike, gasped its last on Saturday night. However, I just finished racking the AHS Oaked Porter into the keg from the secondary, where it had sat on the oak cubes for 10 days after 17 days in primary (I would...

    Question on AHS kits

The Double Chocolate Stout was fantastic. Just killed that keg last Saturday.

    AHS double chocolate stout

I made it and still have some of it left on tap. It's fantastic as-is. In fact, I plan on making it again for the winter and dry hopping with some mint leaves. The recipe includes 1 oz of Belgian cocoa powder but instructs you to add it to the boil. AHS sells it in the ingredients section...

    AHS Extract Recommendation

Me, too. Didn't realize how lucky I was until I saw all these people from across the company talking about it!

    AHS Extract Recommendation

I don't think you can go wrong with the AHS recipe kits as long as you pick a style you like. The Texas Kolsch (mini-mash) disappeared in a damn hurry and the Texas Blonde is in the fermenter now (all extract with a little lemon grass added based on AHS staff recommendation). The Blonde was my...

New to kegging - Too much head

I'm really confused on this. I've got the same problem as the OP on a Belgian Trappist ale. I didn't know anything about the effect of the tubing length when I built my keezer, so I kept them only as long as needed. The result is that I only have about 18" of tubing on taps 1 and 4 and only...

    Same batch with different yeast

Saint Arnold's does this with one of their commercial beers. Fancy Lawnmower is a Kolsch fermented with a Kolsch yeast. Weedwacker is the same recipe fermented with a Bavarian hefeweizen yeast.

    Austin Home Brew Extract kits???

I saw that in your sig. I did mini-mash. Been in primary since Sunday night. I'll leave it in primary until Monday or so when I'll keg the blonde and move the wit to secondary. Wit will get kegged the following Monday and then both will condition for a while since we'll be out of town for 2...

    Austin Home Brew Extract kits???

I feel lucky. I got back into homebrewing a couple of months ago after about doing a couple of very mediocre batches about 10 years ago. I came across the forum just a few days ago. I saw the references to AHS, but wasn't sure what it was actually referring to, though I figured it could be...

    Photo tracing for logo

I've pretty much decided on my brewery name: Penny Creek Brewery. It's based on my street. Our house is on a cul-de-sac and backs up to a green belt, so we have a great view. I took an excellent picture looking out off the back deck of our two Adirondack chairs, table between them, pint...

    Show us your Kegerator

First time post. A Google search a few months back led to one of the keezer build threads. At that point, I hadn't thought of using a chest freezer and didn't know what people meant when they were referring to a collar. A few days of reading up led to a trip to Conn's, Home Depot and my LHBS...
